WHAT IS THE DIFFERENCE BETWEEN NORMAL CHOCOLATE AND 100% CACAO? - +
Legally, in order to call something 'chocolate' it needs to have sugar in it. It can't be the actul pure real deal. Which is weird, but whatever. Our cacao has no added sugar or sweeteners, it's just nutritionally dense pure cacao with Ayurvedic spices added.
What should I look for in high quality chocolate / cacao? - +
Chocolate that has been artisanally made, minimally processed, and without industrial ingredients like soy lecithin, vegetable fats and emulsifiers is what you want to look for (which ours is of course).
WHAT IS SINGLE ORIGIN? - +
Single-origin is chocolate that’s made from one variety of cacao bean, harvested from one area.
Why is this important? Just like grapes used for wine, the cacao plant has a distinct flavour profile according to where it's grown - it's terroir. Like wine-lovers can, those will very developed palettes may be able to recognise the different notes of single origin cacao.
Our cacao is grown between mango and coconut trees so has a fruity aroma mixed with sweet caramel.
Single origin chocolate means it's also also easier to trace the cacao’s source.
There are some great blended chocolates out there, confectioned by master chocolatiers. But for most chocolate, a whole mixed bag of beans is used from different places, making it very difficult to trace, and then heated to high temperatures so that the cacao flavour (and nutrients) are dulled, and all the beans taste the same.
